Ingredients:

  • Basmati Rice – 1 cup
  • Chicken – 1/2 kg, cut into pieces
  • Onion – 1 big, chopped lengthwise
  • Tomato – 1 small-sized, roughly chopped
  • Ginger-Garlic paste – 1 tsp
  • Coriander leaves – 2 tbsp, finely chopped
  • Mint leaves – 15 leaves, loosely packed and chopped
  • Green Chilies – 2, slit
  • Garam Masala powder – 1/2 tsp
  • Red Chilli powder – 1 tsp
  • Curd – 1 tbsp
  • Water – 1 1/2 cups
  • Oil – 2 tbsp
  • Ghee – 2 tbsp
  • Salt – to taste
  • Cloves – 3
  • Cardamom – 2
  • Cinnamon – 1-inch piece
  • Bay leaf – 1
  • Star Anise – 1
  • Mace – 1
  • Stone flower – 1

Instructions:

  1. Wash the basmati rice in cold water and soak it for 30 minutes. Drain the water and set aside.
  2. In a thick-bottomed pan, heat oil and ghee together.
  3. Add the whole spices – cloves, cardamom, cinnamon, bay leaf, star anise, mace, and stone flower. Sauté until they release their aroma.
  4. Add the sliced onions and sauté until they turn golden brown.
  5. Stir in the ginger-garlic paste and sauté for a minute until the raw smell disappears.
  6. Add garam masala powder and sauté for a few more minutes to enhance the flavors.
  7. Now, add the finely chopped coriander leaves and mint leaves. Sauté for a minute to infuse the flavors into the spices.
  8. Add the chopped tomatoes, salt, and red chili powder. Sauté until the tomatoes become soft and the masala blends well.
  9. Incorporate the curd into the mixture and mix it thoroughly.
  10. Add the chicken pieces and sauté for about 2 minutes to coat them well with the masala.
  11. Cover the pan with a lid and let it simmer for 10 minutes, allowing the chicken to cook partially.
