  • 1 quart Onions, Frozen, Diced, #1610
  • 2 50-ounce cans Soup, Cream of Chicken, Low Sodium, #2512
  • 3 quarts Sour Cream, Cultured, MS
  • 2 quarts Water, Municipal, Mississippi
  • 3 pounds + 4 ounces Cheese, Cheddar, Low Fat, Shredded, USDA, #B027

  • 1/2 cup Parsley, Dried, Chopped, #2717

  • 1 gallon + 3 1/4 cups Water, Municipal, Mississippi
  • 1 tablespoon + 1/8 teaspoon Salt, Table, #2219

Instructions:

Thaw the diced chicken in the refrigerator overnight. Once thawed, drain the chicken before using it in the recipe. Remember to store the chicken at 41 degrees F or lower while thawing.

Prepare The Breadcrumbs:

  1. Toast the hamburger buns in a low-temperature oven (200 degrees F) until slightly golden and firm.
  2. Let the buns cool before breaking them into pieces and placing them in a food processor or grinder.
  3. Process the bread until you achieve the desired crumb size.
  4. In a large braising pan or skillet, sauté the diced onions in pan release spray until tender, which should take around 5 minutes.
  5. In a separate large bowl, blend the low-sodium cream of chicken soup, sour cream, 2 quarts of water, shredded low-fat cheddar cheese, diced pimentos, dried parsley, and sautéed onions.
  6. Add the thawed diced chicken to the creamy soup mixture and combine well.
  7. Pour the chicken mixture into half-size steamtable pans (12″ x 10″ x 4″) and sprinkle the top with the prepared breadcrumbs.
  8. Bake the casserole in a conventional oven at 350 degrees F for 30-40 minutes, or in a convection oven at 350 degrees F for 30 minutes until golden and bubbly.
  9. Serve the Creamy Chicken Casserole over steamed brown rice.

To Prepare The Rice:

  1. Spray a steam table pan with pan release spray and add the brown rice.
  2. Pour in the water and add the salt, mixing well to combine.
  3. Steam the rice for approximately 45 minutes until tender and fluffy, checking water absorption at the 30-minute mark and adding more water if needed.
  4. Portion each serving with a #8 scoop (½ cup) of brown rice and a 6-ounce ladle or spoodle of the creamy chicken mixture.
  5. Enjoy the creamy, comforting goodness of this Creamy Chicken Casserole with Brown Rice! Remember to store any leftovers properly and chill them within 2 hours to 70 degrees F or lower, then to 41 degrees F within an additional 2 hours.
