Recipe Summary:

In this recipe, chicken legs and thighs are marinated in a delightful blend of tomato catsup, 7-Up or Sprite, Philippine soy sauce, garlic, and lemon juice. The marinade not only infuses the meat with a burst of flavors but also tenderizes it, resulting in incredibly juicy and flavorful chicken. After a day of marinating, the chicken is grilled over charcoal, creating a delicious smoky aroma. Finally, the chicken is basted with a thickened sauce derived from the marinade, adding an extra layer of richness to each bite. Pair this Aristocrat BBQ Chicken with aromatic Java Rice and tangy Atchara for a complete Filipino feast!

Ingredients:

  • 10 pcs chicken legs and thighs
  • 2 tbsp oil
  • 2 tbsp cornstarch
  • 1/2 cup water
  • 1 cup tomato catsup (tomato sauce in NZ)
  • 1 can 7-Up or Sprite
  • 1 cup Philippine soy sauce
  • 1/2 cup sugar
  • 1 whole garlic, minced
  • 3 tbsp lemon juice
  • 1 tsp freshly ground black pepper

Instructions:

  1. In a deep bowl, combine all the marinade ingredients thoroughly to create a flavorful mixture.
  2. Use a fork to prick the chicken legs and thighs several times, allowing the marinade to penetrate the meat. Coat the chicken pieces evenly with the marinade and transfer them to a container. Cover tightly and refrigerate for at least 24 hours to let the flavors meld and the chicken tenderize.
  3. When you’re ready to cook, take the marinated chicken out of the fridge and allow it to come to room temperature.
  4. Drain the chicken of its marinade, but make sure to reserve the liquid for later use.
  5. In a saucepan, mix the water and cornstarch until there are no lumps. Add the separated marinade liquid and the oil to the saucepan. Cook the sauce over medium heat, stirring continuously until it thickens into a delectable glaze. Set the sauce aside.
  6. Prepare your charcoal barbecue and let the coals heat up until they are glowing red and covered with white ash.
  7. Place the marinated chicken on the grill and cook each side until they are almost done. Avoid basting the chicken at this stage to prevent the sugar in the marinade from burning.
  8. Once the chicken is almost cooked, start basting it generously with the cooked sauce. Grill for an additional minute on each side to caramelize the sauce and create a tantalizing glaze.
  9. Remove the chicken from the grill, and it’s ready to be served!
  10. Present your flavorful Aristocrat BBQ Chicken with fragrant Java Rice and a side of zesty Atchara for an authentic Filipino dining experience.
